Well here we go. Only my third smoke in one week on my UDS. First long smoke for sure. Doing a PP for tomorrow's tailgate for our First Place Texas Rangers!
Found some butts for .99lb and bought the last 4.
Got it rubbed down with a kicked up version of Jeffs great rub (Hungarian paprika, and alot more red pepper ; l )
Getting the UDS prep'd and up to temp..
Had the UDS GOING for about an hour and couldnt get the temp up with everything open. I realized here at my local pub where I like to cook and share my love... that behind the walls of the patio I get no air..
So I made it work.. and since Im still learning the new smoker I thought I would join it til I get her at her best temp.
Someone walking into the bar got a good laugh at my "mobile kitchen and spice rack". I really never thought about it. But thought it was funny. Always done it that way. Btw the UDS fits snug in the back for mobility. . Love it.
Will post more later. I started at about 11am and the butt is 7.5lb. Im guessing 12 hours with a normal stall will put me around midnight. I have tickets to tonights game at 7 as well so im hoping the stall will happen then;)

Good luck, i'm sure you're having a blast!   You can always foil it at say 150-160 and power it right past the stall.....un-foil it around 180 and crank the heat up a tad to get the harder bark. 
 
I just knew you would post FWI..I like your post and comments specially because you too are new to the UDS .. BUT I will wrap regardless when I leave the for the game just incase. I figured it wouldnt hurt. It will have 8 hours of smoke before then.

I do got a ? For y'all. I plan to pull it when finished ... and just bag it for tomorrow. Should I put the finishing sauce on once pulled or should I wait til tomorrow when I reheat it. Or both? Im trying SoFlaQues finishing sauce.. ive been dying to try since researching finishing sauces..
 
I'm glad you asked about the finishing sauce because i wanted to try it with my next butt.... i assumed it goes on at time of the foiling like with ribs.

Well what you are referring to would just be the foil juice ...ill toss in a little citrus juice, probably oj since I dont have apple. im talking about once its done.. pulled. I've always just served as is.. but since im not serving right away.. Im thinking add the sauce after it's been reheated?
 
What I'd probably do is go ahead and put some finishing sauce on there when you pull it, but save some to add when you reheat to provide some moisture during the reheat. Either way I'm sure it'll be great!

Thanks Red.. I've decided ill do it both. At pull and after reheat!

5.5 hours in.. UDS is still at a lovely 225* even with the hourly 'spritz' of 1:1 sprite/applecider .. man I love this build...
The lady of the day is now at 159* IT... bring on the stall you pretty girl... I have two hours until my ball game so Ill be watching it like a smokeHawk until about 6pm.. then ill wrap.. and pray for a Rangers win and a smooth smoke til I get back at 10pm
 
Aaaawwwwwaahhh... my UDS went out while I was at the game. Rangers won BTW. It burned the whole basket of charcoal. Last read of the butt was 176... at 845.. its now 1040. I cranked the uds back up.. got it to 350*... any suggestions? Right now the butt is at 162* IT AND its still wrapped.
 
Well im out of fuel.. into the cookie oven it goes.. it has one temp. . 300*. Guess Ill take the butt to its 195/200 and hope I didnt ruin it. Disappointed with UDS.. Any suggestions of why it ran the charcoal empty after 10 hours? It wasn't cheap fuel but not top brand. My basket is 18" x 8" tall.. and a 3" gap from bottom of drum for airflow.. and my ash build up wasnt high enough to really effect the air flow. Basket was full with aprox 11lbs of charcoal plus my mesquite chunks. .
 
I'm surprised it didn't go longer...I'm using KB for long cooks and lump otherwise. You'll also get more mileage out of a basket with a automatic temperature controller...I have the a Party Q and the Pitmaster IQ.. great for low and slow, especially while you're away from the pit

Oh..and you'll want a redesign on the basket, it should have more space from the bottom imo. Mine is a kit but I'll measure for you the distance mine has.

Almost 6 inches...5 3/4 to be exact. With good fuel, plenty of air flow, a good basket which I'm sure you have and a temp controller I bet you'll be good for long cooks. If you need more fuel it's no biggy to add some at the end

Thanks FWI.. sorry for late response. Been crazy busy with work. Ill be doing a brisket this sat on a camping trip.(12lb.. ) So it will be another test run. I will buy some good lump fuel this time..
