Hello all great to have found this forum and sorry I am just getting around to my introduction. We are in washington state and I just purchased a MES 30 and I am very excited to get started.I intend to use it for well everything meats, fish and cold smoking cheeses and such soon as I get teh attachment. I do have a quick question someone mentioned adding a amnps to to smoker I looked it up and was wondering if it replaces the current smoking system of the MES?
