Hi everyone, My name is Jim and I am a smokeaholic. It started last year when I built my first smoker, a UDS or Ugly Drum Smoker.. I don't think it is ugly but some times it is a bit small.

Last weekend I got a COS, a Char-Broil 1280. I smoked some Salmon and Brisket on it last weekend to see how it behaved. I am going to start the normal mods listed on this site.

Good smoking to ya all and I look forward to learnin some stuff..
