Mop or not?

I don't but there are some benefits. The meat will absorb more smoke the longer the surface stays moist. And using a Mop with Fruit Juice will add to the Bark in the long run as Fructose Caramelizes at around 230*F compared to regular Sugar which browns at 320*F. The down side is with most smokers, every time you open the Door the temp drops and can add 20-30 minutes to the cook time...JJ
 
JJ pretty much nailed it .  To mop or not to mop is a subject that is often debated.  I've done it both ways, and must say that I like the results of an apple juice-based mop.  It does make a nice bark, but it is certainly true that most smokers take quite a long time to recover temps when you open them to mop or spritz.

Best advice is to try it both ways and decide for yourself which works best for you.  Either way will be great!

Why not try 2 B/Butts.....mop one and dont the 2nd one.  See which one suits your family's tastes the best!

I just to foil...and now I dont just because I experimented!  The guys here wont steer you wrong!
