Smaller fibrous chubs are done and blooming.
Is this cure #1 or are you going to dry it out?
Going in the fridge for couple days.
Bagged SS is done. Smoker off going to let these hang in here all night.

Cant wait to see it sliced. Seeing ya'll making your own sausage and stuff just makes me want to try making it....another hobby to say.....lol....

Fibrous casings peel right clean off the SS .
Ready for the bbq.
Rick looks great,,,, so when I vac pac mine I leave fiborous casings on is there a diff for taking them off or just personal peferance??
