Hi. I just signed up. Found the forum because I am currently in stall with a 4 lb. chuck roast in my smoker and I freaked out. Ran straight to the computer, Googled smoking chuck roast and found this forum. Thanks for calming me down. I have been at 162 for 3 hours then it dropped to 159 for the last hour and I lost all self control. I'm new to smoking meat....only smoked a pork butt, top round roast and ribs so far. Still learning...I have a lot to learn. Thanks again!!!

Thanks! I'm finally thru the stall...@ 167 after 11 1/2 hours. I think I had my temp too low...right around 225. Smells great though!

Welcome to the forums, Shaggy!  Glad you joined us.  You've found a great place to learn and share ideas on our favorite pastime...Smoking and Grilling great food!  Lots of friendly and knowledgeable folks here who really enjoy helping one another.  Good luck with that chuck roast, and just ask when you need help and you'll get plenty.

What type of smoker you using? Have feeling your temp gauge is off because that's an awful long smoke for a 4 lb chuck. And you're not even finished yet. 225 or not.

Masterbuilt pro gas. Says duel fuel but I'm not good enough yet to know how or why I would use that.  The chuck is a disaster. 14 hours and it's still at 169....I think the gauge on the smoker is screwed. I read that you cant trust the gauges that come with the smoker....seems kinda dumb to put a temp gauge that isnt accurate on a smoker. I also got a so called wireless probe for the meat. It has a timer on it that reads in minutes and seconds. How often do we smoke meat in minutes? Like I said...got a lot to learn.
