Well so far everything I have smoked has turned out so good my grill is getting jealous, been reading a lot about fatties and they look too yummy to not try one. I got a brand new bag of RO lump, 1# beef and 1# pork, onions, mushrooms, mozzarella cheese and cheese and bacon sausages to cut into pieces and put inside, 2 packs of bacon for the weave.

As always with a new smoke kinda nervous but with the wealth of info on this site I know it will be good.

Also 3rd day of not smoking (me not my smoker lol) so this will be a huge personal test, smoking food, beer and a cig always go hand in hand....heh

Ok forget the bacon weave, this thing is HUGE, next time just 1/2# each meat. It is over a foot long and super heavy, I always make too much lol

As promised Qview :)


All ready for the inside stuff. Kinda thick, knew I made too much, I did add 2 eggs to the meat to help keep it moist.


Mushrooms, onions, garlic and sausage with 1 "gulp" of beer on the stove


All on top with cheese



Rolled it the best I could, heavy sucker.


Meat probe os no longer in metric lol


4 hours and pulled, resting...smells amazing


Sliced, holy mother of BBQ, this thing is amazing! I know what lunch is tomorrow. Nice bark and smoke ring. I used maple, a bit of mesquite and hickory.
