Have a question with regards to the 3-2-1 method of doing ribs

I have read a number of the posts which state that the first 3 hrs smoker temp to be 225; does this also apply to hrs 2 and 1

Yes it does. Though some people cook them hotter. 3-2-1 ribs are just something you have to play around with to get them to your exact liking, everyones taste in ribs is different. The 3-2-1 at 225* is just a real good starting point.
