Hello.  Been grilling all my life (remember Dad and his insane charcoal lighting antics!) and purchased my first smoker (Weber bullet) two years ago.  I have perfected a Jack Daniel's bbq sauce and have smoked almost everything with success.  Tried making my own sausage a couple of weeks ago and that was also terrific, but I would like to find more recipes for sausage.

We will be moving to Cochrane, Ontario in a couple of years, and I am going to build my own brick bbq/smoker up there, so if you know of good plans, point me in the right direction.  Also looking to communicate with other smoker/grillers to help me hone my skills.

What is the best way to go about smoking cheese?

nice city, but we will be moving to Cochrane in a few years.  I spend most the summer up there and want to build a brick bbq/smoker thing up there.
