Our 2 sons and their wives came to visit today, so I'd planned a couple racks of spares and some ABTs on the new Rec Tec pellet pit. 

2 nice racks all trimmed up St Louis style.


Rubbed up.  I made up a batch of Memphis Magic Dust for this smoke.


I also rubbed the rib tips and all the trimmings.  I'm saving the rib tips for later in the week, and the skirt and trimmings will be an afternoon appetizer while we enjoy a pretty day on the patio.


I preheated the Rec Tec to 230*.  The Maverick thermo probe is on the grate back center.  I'm pretty pleased with the accuracy of the temp control of the Rec Tec.


2 racks and lots of trimmings, just got it all in there.  Now they get 3 hours @ 230*.


I foiled one rack with the Trigg formula (squeeze Parkay, honey, Tiger Sauce, brown sugar and apple juice). 


I made up a batch of Chef JimmyJ's foiling sauce for the second rack.  If you haven't tried it, you should...its great!  No pics of the foiled step, company was occupying my attention.  2 hours in the foil, I bumped the temp up in the Rec Tec to 275* for the foiled period.


The ribs just going back on after removing the foil.  The rib tips are already finished and in the fridge for another day.  That made room for some ABTs.  The ribs are really done, just want to firm them up just a little.


Everything was a big hit.  Wish I had a plated pic for you, but again, I got a little rushed at the end because everyone was ready to eat.  Mrs. Red made some corn salad, and one of our Daughters-in-Law made a potato casserole.  All in all a very enjoyable day.

Ohhhh nice Red!   I figured you'd have the new grill broken into this weekend.   So was it everything you hoped, and did you feel you needed extra smoke and use the AMPS?

Thanks FWI.  Man, I'm lovin' it so far!  And at temps under 250* it makes plenty of smoke.  At 230 the ribs came out with a perfect amount of smoke flavor.  I ran a test run with the AMNPS yesterday and it didn't perform well at all.  I already have one of Todd's tube smokers on the list, but at low temp smokes, I don't think I'll have to use it.

Awesome, great to hear.   Sometimes for pellet grills like Traegers people will attach smoke generators like Smoke Daddys to them because the generators are independent of the grill and just pump the smoke inward but that 's really good yours is producing enough smoke.    You should have had a step up on taste coming from the MES...pretty noticeable?

Yep.  Nothing like meat smoked in a wood fired smoker.  Mrs. Red and all the kids raved.  One of the boys said he thinks they are the best of mine he's eaten.  I humbly agree.

Red now that you're back in the world of wood burners (automated or no)  we need to talk you into picking up a kettle grill for some simple meals....lol, if you don't have one that is.

Hmmm...it's a thought!  Had a kettle years ago and used it til the bottom rusted out.

Thanks, Willie!  No real bugs yet, but my SS grates are just a tad warped.  RT already knows about it and will be shipping me some new ones.  Thankfully, this doesn't affect it's performance.
