Been a fun few days with lot's of good eats along the way.  The big smoker sure is nice too.  Made a pile of hot dogs and Bologna too

That Boston Butt sure was tasty.  Smoked it while we were making the sausage along with a couple of chickens.   ... Carve it warm right at the table then finish it off (whats left) with a little more cooking and pull it for pulled pork sandwiches ... yum, yum.

Very impressive variety! I generally like to make at least a couple types of sausages when I break out the grinder & other sausage-making paraphernalia. It's more work obviously, but the diversity is worth it. Your list of sausages created is great! Nicely done!

I agree ... make plenty and do one cleanup.  We have developed about 6 favorites over the years and I try to keep them all in stock.  I tried your mango chicken and we liked it so I make a 4# batch using thighs and I add 4 oz. of pork fat to the mix.  I also use white wine instead of water for the mix.

I use the cellulose casings (30mm) to make hot dogs and find we really like the Kielbasa and the Bratwurst for that.  Sam's has a nice 8" bun and a 7" dog on it is a full meal, covered with chili/cheese, mustard and a good wad of sauerkraut!

I can run about 40# of sausage in the smoker and have a good hanging length of 40"

Looks great! I need to get a proper stuffer and grinder, I had a attachment for the wife's kitchen aide. It was terrible and took forever!!! That reminds me I do have a birthday coming up that just so happens to fall on Father's Day! Hmmm!
