i just recently got a vertical dual fuel masterbuilt smoker.  I got it all assembled and have followed the seasoning process according to the manuel.

I also did some dry runs to test and get a feel for the temperature adjustments.  So far i'm very happy with this smoker. 

With ambient air temps outside of -1c on high i can get it upto about 450F.  I know I"ll never cook at that heat but I just needed to know what max setting would put out.   All the way turned down on low I was able to get consistent temps down to 180F.

No hear comes my problem.  I was using some native Maple chunks I had cut up myself.  I'm also using a 8" cast iron pan ontop of the woodchip tray as recommended by many on here.   My problem is that I can get the wook in the pan smoking if i bring temps up to 250+  when I run it real low which I do plan on for jerky making.   I just can't seem to get any smoke out of it.  The wood chunks just don't heat up enough to start burning in the pan.

Any recommendations.  I am fairly new to smoking.  Just started last year with a ECB that I've got rid of and now have my vertical gasser.

Tre, morning..... I had that same problem with a smoker I built.....   My solution was to get rid of the cast iron pan and buy a chip pan that fits a little chief smoker....  thin SS pan transmitted the heat better to the chips...   Cast iron seems to distribute the heat to the entire pan...  The SS pan worked great.... solved the "no smoke" problem...  Dave
 
Best thing to do would be to get an AMNPS. Then you can get up to 11 hours of perfect smoke, without touching it.

Bear made a good suggestion, I use an AMNPS as well. Contact Todd at...http://www.amazenproducts.com  and describe your smoker. He has a lot of knowledge on which of his several Pellet Smoker designs work best with the common types of Smokers out there. He is a great guy and will not give up until you are satisfied...JJ
