Not overly creative, chix boneless breasts been brinin for about 18 hrs, added in Mac & cheese and corn on the cob (cobs were really just heated up, I like em crisp, smothered in honey butter and wrapped in foil) -- decided to smoke off some super thick bacon to add to the Mac & cheese while my wood was burnin off... That was AWESOME!!


I'll have a finished product shortly!!!

Didn't have too much of a choice with the corn; it was unhusked and hadn't been soaked. But we love the sweetness of sweet corn, indigenous to our area and enhanced with honey butter. I add a steak seasoning on top, a blend of course black pepper, kosher salt and a few other odds and ends... And by keeping it crisp, the combo is perfect!
 

TADA!! Lol, chix looks so blah and pasty--I'm not a huge fan--but what this lacked in looks, it was everything i hoped for; a melt in your mouth juicy, firm, breast!!

Mac & bacon cheesy was awesome, especially after my sticky sweet honey butter from my corn flowed around my plate and met up with the cheesy, savory, smoky goodness... Omg! I would have never thought!! A huge must-try!!

Oh, lunch is gunna be AWESOME tomorrow!!

Mac & Cheese recipe? Well it was a mid-week smoke, so I have to admit, the Mac & cheese wasn't home-made...it was 2 tubs of Hormel's "Simple Made Country Crock" Mac & Cheese in a 9x13 casserole dish smoked for a bit to bubbling uncovered. Then I added extra real sharp cheddar off a block, the bomb-ass thick bacon I smoked, and a few pats of real butter, a bit of "Montreal steak seasoning" - covered for a bit, then uncovered to for the last 5-10 minutes. Quick, easy and yummy!! Took 30-40 minutes in the smoker vs 2.5 hours for my home-made recipe and ALMOST just as good!!
