BB No-Foil Cooking Time?

I have been experimenting with cooking BB's at 225-275 without foil. Do you guys (that don't foil) find that the BB's take longer to cook than using the 3-2-1 or 2-2-1 method? I went a solid 5-6 hours at about 225-240 and I still think they could have gone a bit longer. If it changes anything, I did mop every hour.

I do ribs without the foil sometimes and I run the smoker at 265*. Depending on the weather conditions they take anywhere from 4-5 hours. I don't mop, or open the lid to look, I just let them do their thing! I should also mention that I smoke with a dry smoke chamber, no water pan or other moisture inducing apparatus!

I don't foil my ribs. Usually BB's go for about 5 hours (depending on the meat) and pull. I use a dry chamber but I do spritz or mop. I am cooking on a Lang so temp recovery is extremely fast so I know I can spritz or mop without issue. Might want to try a water pan and less mop/opening the chamber. Maybe just mop the last hour or so. What are you cooking on?

I have the 22.5 WSM. I mopped about 4-5 times last time and it made a really nice crust/bark. I will shoot for only a couple of times this time around and see what happens.

My 22.5" WSM cooks baby backs in 5-6 hours depending on how thick they are....I don't foil anything anymore

Every time I have made ribs without foil they have taken an extra hour. I smoke ribs in the 225-250*F range. I do foil most of the time as my family likes the flavor my Foiling Juice gives the ribs..JJ

See my current post ... Just finished 5 hours , no foil... I like a little tug to my ribs , but for the bone to pull clean which mine did ...I'm sure mine could have easily stayed on another hour ,but they passed the bend test and I was hungry !!!
