Checking in from Sacramento, CA!

Hello,

 

I'm Jason from Sacramento, CA.  I've been searching for a good forum to call home to my virtual online BBQ life and this seems to be the right place....I have a Chargriller grill that does half propane, half charcoal.  Used the propane side quite a bit, probably once or twice a week when the weather is good.  In a couple of days, I'm going to try the other side.  Bought a side fire box and installed it.  "Seasoned" that side by spraying the walls with vegetable oil and lighting a charcoal fire.  Ready to rock & roll.

 

I've been doing a lot of consulting with my fellow smokers at work, some of them raving about their Orion smokers.  I'll give mine a shot and see if it works.  As far as accessories go, have some mesquite lump charcoal, apple wood chunks to give me some heat.  Bought a cheap $10 chimney to begin the fire.  I also have a wood chip box that I bought from the store that I was planning on lining with foil and filling with a liquid to keep things moist.  Finally, have a digital thermometer to help me keep track of time, as well as check the internal temp.  I also have a spray bottle, but probably will not use it (still on the fence).

 

I definitely plan on reading some more on this website.  Got a book from Amazon (Backyard BBQ: Art of Smokology) that I've been skimming through.  Oh, and for the first meat, I'm going to do pork ribs.

Hey Jason!  I'm brand spanking new to this site as well, but I have been working with smokers for a looooooong time.  I have noticed that people's go-to wood for smoking tends to be mesquite in some areas of the country.  Just for your own curiosity, I would try finding some pecan wood chunks to mix with the apple wood chunks you have, mesquite has a characteristic that tends to make your meat a little more bitter than it really needs to be, unless you like the way that tastes, then use mesquite all you want!  I have just found it interesting that people seem to prefer this bitter flavor.

Welcome Jason...Glad  you decided to join us. We like to smoke and eat smoked food here and lots of great folks who are very good at it. I have found some super dynamite recipes and tips on this site....Sure you will too....welcome1.gif
