So i thought id smoke a whole chicken today, and after looking at various recipes i decided to just put a nice rub on the chicken and put in the smoker at between 225-250 and they see where that takes me.

After 3 hours i decided to take it out of the smoker and cover it in a really nice jerk bbq sauce and ramp the heat up for the final hour.

And here it is after i applied the jerk bbq sauce.
Ive emptied the water pan no to get the temp up and i will see how it is after an hour.
