Thanks for giving us rookies a place to ask for help! I go by "Doedistroyer" mainly because I got into sausage making and smoking thru harvesting venison and fish. All to often I have heard that venison should not be eaten so it became a personal challenge of mine to convince friends and people I run into that venison is as good as any other meat and its about what you do with it. This lead to lots of trial and error but the family and friends cant wait to see what I can come up with next. Haven't done much in the way of smoking other meats and decided to try my hand at bacon, this is what lead me to this forum.

For those that are interested I'm located near Philadelphia. As far as smokers go I built one from a traffic control box that got wiped out in an accident, it seemed to be about the right size. Began with just wood in it, but now it has an electric burner as well as propane for more temperature controls

Morning, doe
Glad to have you on board. Sounds like you might have some good info yourself in the venison dept. You probably heard this one before but.....
"If god didn't want us to eat deer, why did he make them out of meat?"

And every day millions of innocent plants are killed by vegetarians.... stop the violence! Eat some meat.
