So, I bascially just followed what Bear has written about smoking prime rib and it didn't disappoint!!
I scored the fat on both, then smothered with worchestershire sauce, sea salt, black pepper, garlic powder and minced onion because I didn't have onion powder.
Got the WSM up to temp (250), using Kingsford charcoal and Hickory chunks, and put the Prime Ribs on, they were both about 5#
Got the smoker to dial in around 220 and smoked them to an internal temp of 150
Pulled them off, placed in foil and let them sit in the oven for an hour, ready for slicing
Nice color, just the way I wanted it to look, ribs off
Some wanted as is and other wanted some sear, to the grill!!
Hot sear on the ribs
Women and kids ate first at dinning room table, I waited for my father and bro in law to show up after work to dig in
A great day weather wise, food wise and with family!
Hope you enjoyed the pics.
