chicago... well close enough
My smoked salty nuts want to take a trip to Hawaii (Kauai).

i told my sister inlaw i would send her my nuts for her birthday, if i could.

Big smile on my face, I know, I know, he he he!

My version

3/4 Lbs. or so of almonds, pecans, cashews. raw and in pan with 1/4 stick butter

medium low heat till light brown, let cool (not cold still warm) add 1.5 Tbs real maple syrup

1/2 to 3/4 tsp salt or to taste (regular salt btw) mix it up

2.5 to 3.5 hours cold smoke 50-65 deg.

amazen smoker with 1/2 hickory and 1/2 cherry pellets

in a horizontal offset on a foil pan.

made 2 batches so far and they are not sticky.

i have a food saver, and use it often.

NOW MY QUESTIONS

Will my nuts survive the trip, or will they go bad?

Can i alter this to make it less parishable?

and if so, how?

i want to get invited back there, i wish we could all go and party!
