I missed smoking the last 2 years so I bought a Cajun Injector Electric Satinless Steel Smoker. I used to do a lot of smoking ribs, chicken, turkey, pigs and brisket. My 300 gallon fuel tank smoker died of cancer (rust) 2 years ago. I do not plan on any large scale smoking anymore just that the restaurant style does not taste that good as I used to do. 

I use apple wood saw dust that I make from the prunings of our apple trees. It seems like work but worth it. I cut the pruning up to 3/8" into 1"pieces and put them in the dehydrator to dry. Then into and old blender to make my dust. It has worked very well over the years past. Sometimes I use mesquite just depend on the taste I want.
