Hello all

I have been smoking with a smokebox in my BBQ for years but finally decided to try the real thing, going to start small at firth then we shall see. Tomorrow I will be picking up aMaster Chef[emoji]174[/emoji] Vertical Smoker, and once I seal it a bit (already know it will lose heat and smoke) I will try it with chicken at first then move on to pork, beef, fish and pretty much any food I want this summer :)

I have been lurking for a while now and I know that you guys wil be able to answer any question I throw at you, I am a fast learner so I shall of course regale you all with the many mouth wattering yummy goodness that comes out of the smoker, or tell you how bad it went lol.

P.S. For some reason I can not update my profile with my hobbies and such, I click save and it just sits there saving.

Well got the smoker built and I am excited as can be, I arrive at Canadian tire and hey it is on sale, the smoking gods were on my side for sure :) however I see a bit of an issue, first I know I will lose heat and smoke from the doors, plus the thermomitor kinda just plunks in there, no seal, not even a probe, just plunk it in the hole and done.

On the plus side the metal is pretty solid, no holes in the bottom of the coal pan so I can see a need for a slight mod so the ash can fall and not smother the wood.

Yes yes pics shall follow I promise, going to season it in the morning then try my first smoke tomorrow afternoon, of all things, a t-bone steak :)
