Wife felt like doing something nice for me for my 30th birthday and surprised me with a brand new WSM!!!! (It was a great surprise because my birthday is still a month away.) She must be hungry. So excited to get started. Now what should I smoke first?!

Happy Birthday.  I recommend a Pork Butt for some pulled pork sammiches.  The butt has a lot of fat content so it will be more forgiving as you try to maintain a steady temp in the new cooker, plus it will season the rig pretty well to get you a head start on getting rid of the shiny interior (which is why it is difficult to maintain temps at first). After a few cooks and a build up of seasoning it will maintain heat so well you can do overnighters and not think a think about it. The Renowned Mr Brown is a great place to start.
 
Going with 2 whole chickens and beef ribs. I have the birds in a brine and ordered Jeff's rub recipe. Going to make the rub and BBQ sauce tonight and and rub it down in the morning.

Decided to do a dry run in a bit with a bin full of charcoal, some smoke, and some really fatty soup bone scrapes and the innards from the chicken to hopefully start coating this thing with some grease. Really excited to see how it holds it's temp and how it runs. Man what a great wife!

Interesting...I went right to ribs with my WSM.  Ribs on Saturday and the next day a pork butt.  Chickens are always a good first smoke!!!

:)  Very nice gift!!  Smart woman, to get you a "gift" you'll both enjoy.

I'm the chief cook, griller and smoker in my house, so I can appreciate such a nice gift.  I just got a new Pittmaster IQ for my beloved WSM and that thing is the bomb!  Set the temp you want and forget it...it runs perfect.

Brings back memories. Got my first smoker on my 30th b-day as well (back in 2010). It's now my #1 hobby and I only wish I has learned back when I was 20!
