Well after seeing Chef JimmyJ's thread on turning a corned point into a pastrami I figured it was something I could actually do so I gave it a go.


Overall I was very very pleased with it and will be making again soon.


Here it is out of the smoker I forgot to take any pre smoke pics.

Sliced up and ready to serve

Frying up a few slices with some homemade kraut, it was a little early for the kraut (mixed up last Wednesday) but by this weekend it should be perfect.


And while I was at it I decided to mix up some rub for the year. I like to bulk order all my ingredients and make a large 8lb batch then vacuum pack it in smaller batches so it stays fresh.
 
Your pastrami looks fantastic 05sprcrw !!!! I have made quite a few of these and the are always a hit around my home. Nice job with the homemade kraut and 8 pounds of rub at a time should keep your smoking for quite a while. Thanks for sharing your smoke with us ...
