Just found this site and wish I had more time to read. Maybe later this week. We bought an electric smoker a couple of years ago and I am starting to feel more comfortable and branching out into other things. We have smoked salmon, a turkey, lots of chicken and today, I smoked cheese. First initial taste test was wonderful. I know it needs to "age" a bit in the fridge so I hope I can keep my hands off it. Later this week, gonna try a brisket. This seems like an interesting site where I can get help with my smoking addiction...
