I decided to pick up a flat of cheap chicken thighs at the local Winco and smoke up something for dinner.  Here is pictures is the whole sorted detail:

My chicken of choice and my rub of choice for this smoke, Cabela's Chicken Rub.  The wood of choice is pecan for this meal with an occasional sprinkle of mesquite chip.

Decided to brine the thighs in salt and apple juice.

I have a pretty small smoker so you have to get creative with placement and rotation.

Little over halfway through and things are looking good, smelling even better. 

Finished, what you don't see is my family trying to get around me to eat the chicken.

I call this, smoked chicken and cole slaw on Desert Rose China.

Looks like you picked out the right size package of thighs. When I select thighs I try to find the smallest ones. It seems the bigger ones have too much fat, extra skin and are greasy. The smaller thighs cook up just right and are great for a bite size snack......

I have a brisket I want to smoke. Any ideas on a good rub, kind of chips and how long?? Those chicken thighs look wonderful. I have some in the freezer that I need to smoke....I smoked cheese today. Turned out well, I think!
 
im the smoker in the house,  my husband bought the smoker as a toy for himself but became bored he doesnt have the patience and so i picked it up  i will try to make this chicken the thighs looks awesome

Kath68911: It's the opposite in my house. I can always wait it out, especially when I can sit back, relax, and enjoy a cold one here and there.

My wife only knows how to cook indoors on "High" (I don't think that she knows what "Med" and "Low" mean), but the problem is that she walks away from it and forgets that something's on the stove. To her, the solution was to buy a glass-top stove, so that the mess wouldn't spill under the burners. Doesn't quite make sense to me...must be a Venus/Mars thing!

Worked out OK for me, though: she bought the new stove, so I could buy the new smoker!

welcome to the group. smoking your brisket. a good rub to start with is Tulsa Jeff's. he it the master mind behind this site and the proceeds keep it going. it is a good starting rub. wood any kind of hard wood you like. play with them then mix them up. time 1.5 hours per pound at 225 to 240 if you are not using a sugar based rub you can kick the heat up some. i have a post on fast cooking a brisket. let temp tell you when it is done.
