Happy Easter SMF

It is calling for rain tomorrow and I will be busy doing Easter stuff tomorrow. So  I am smoking a double smoked spiral spiral sliced ham for Easter today and a prime rib for dinner tonight. I will be using my TMLE and smoking with cherry and hickory

The spiral sliced ham weight was 11.5 pounds. I rubbed it with pineapple preserves and my own special rub

The prime rib weight was 6.5 pounds.First i rubbed worcestershire sauce.Then i used my Beef Rub Recipe on it.

3tbsp. coarse black pepper

2tbsp. Kosher salt

1tbsp sugar

1tbsp. onion powder

2tsp. mustard powder

2tsp. garlic powder

2tsp. ancho chili powder

1tsp chipotle powder

2tsp. hungarian paprika

Two hours into the smoke and my IT is 110 on the prime rib. I am smoking at 225

OK my IT on the Prime Rib is 125 pulled it off foiled and let it sit

Next I pulled the Ham off the smoker
