Do you use mustard before the rub???

Hey All,

Newbie from Oklahoma here, so have a little patience!!!

I'm going to start smoking/grilling beef ribs and brisket in my Smokin-it cooker but I need a little assistance.

I keep reading and watching youtube videos where folks cooking beef(ribs & brisket) but before they put on the rub, they slather the meat with mustard.

Other material and videos the folks just wash and pat dry the beef, then put on the rub straight on the meat.

Several times I read where they suggested to put a light coating of oil on the meat before the rub.

So....is there a tip or trick to preperation before the rub??  Does it really matter?

Does it depend on the rub or the ingredients as to which method(mustard or not) you'll use to coat the meat?  Does it depend on which brand of rub?   Will mustard or oil affect different rubs differently or not at all?

Little help....to mustard or not to mustard, that is the question!!!

It's really a matter of personal preference, you will find people do it all different ways and all get good results.
I used to use binders but have quit because I personally don't really see any advantage and I see more disadvantage but this is just my personal opinion. I think a binder puts a barrier between the rub and the meat and when done smoking it seems the rub has become a crust that will fall off instead of becoming a part of the meat.
I just rinse the meat real well then pat dry with paper towels and then rub it down. The rub sticks just fine to the little moister on the meat. I will usually do this the night before and wrap in plastic wrap and put it in the fridge. The next day I will find a very moist piece of meat so I think it is kind of like it is marinating itself and the rub is penetrating into the meat a little. I will sprinkle some more rub on right before going into the smoker.
 
I use the mustard and then the rub,  It helps the rub stay on and has no effect on the meat.   Try with and with out and then decide on your way.  Good luck
 
I'm with Dave in the no binder camp, but you got good advice from both the guys.  Try it both ways and make the call based on which way works best for you.  Good luck, and don't forget to post some qview!
