Duck Breast - Can you cover meat after pellicles form?

First time smoker...I decided to try the hot smoked duck ham recipe from Charcuterie book. Recipe calls for up to 24hrs drying uncovered post brine.

If your duck has been drying uncovered for 24hrs(post brine) and you are not ready to smoke for another 5 hours, is it best to continue to leave uncovered or cover the duck for a few hours and them uncover again before smoking?

any help would be appreciated!! Thanks!!
 
Leave it uncovered, no problem....  Covering might start to dissolve the soluble proteins that just hardened...

Out of curiosity, how long is it then ok to leave uncovered? 
 
Look at it this way----The duck won't know the difference between 24 and 29 hours uncovered, but covering it for 5 hours after the 24 hours uncovered could screw up the whole idea of the 24 hours uncovered.

How much longer???------Don't press your luck!
