I am building my first UDS this spring, one of my goals is to use it for cold smoking with my AMNPS. Why the separate box? Is it just for easy access? Is there any reason I can't load up the AMNPS and lower it to the bottom of the smoker?
Jay, morning..... Usually, the charcoal fire uses up all the available oxygen and the AMNPS won't burn properly....

my main reason for the separate box was so i could use it when hot smoking. otherwise the fat would drip on it and put it out, or flare up. i also will be using it for cold smokeing. it would work fine for that without the box. other than if you are doing a long cold smoke. you would have to remove the food, to refill tha AMNPS.

their are lots of threads on building a UDS on here. read a bunch of them and see what you think will work best for you. if their is anything i can do to help, drop me a line.

PS if you can find a barrel without a liner. it will save you a lot of time and work. i spent a lot of time sand blasting it off.
 
Hey David.  Nice build!  Love the use of the ammo can!   i think I'm gonna go with that too.  Since you sand blasted the interior of the box, are you having any issues with rust yet?  Also are you planning on coating it with anything?  seasoning it maybe?
 
I guess that is the case. If you are smoking for more than a few hours you will need to top up the pellets in the AMNPS and this would be difficult in the bottom of the unit without cutting an access hatch - or having to unload and reload all the meat from the top each time.
 
David that build looks great. I love the attention to detail and the step-by-step construction guide.

Have you considered adding in a smoke baffle at the point where the smoke enters the chamber to help more evenly distribute the smoke and help prevent uneven smoking? With the single point of entry into the chamber, once you load the chamber with meat and get the air draw from the top you may find that the meat on the side of the AMNPS will get a heavier smoke than the meat on the opposite side.

On my mailbox mod all I do is slip it on then when i'm done take it off and put the cap back on to shut the UDS down. Can you take the  ammo box off ? If not can you cut the air flow off so you can

kill the fire in the drum? Next question is do you have holes in the ammo box for air flow or do you leave the lid open some. I have a few ammo boxes sitting around and a stack UDS to finish.

AMNPS won't stay lit in the UDS. (Well at least not in mine it won't) also can reload the AMNPS if needed.

yes I can unscrew the ammo box and remove if I need to. if you will look at post 13 you can see the pics of the ball valve under the ammo box. i close the lid all the way and no extra holes.  i can control the air with the ball valve. i can close the air off all the way when finished cooking. that saves the remaining charcoal.

so far i don't think i need a baffle for smoke distribution. i do have a large water pan for the bottom rack that doubles as a drip pan. so far no issues found. i did a 15 hour brisket for the first cook. then smoked some chex mix. it worked great. links below

Great work wat size air compressor you use on that sand blaster i have the same sand blaster cant get mine to work good i use fine in it an i have a 26gal air compressor
