I went to the store today to see what I could find to smoke and I came across a 3.65lb veal shoulder roast so I got it. Here's the catch.....I've never done veal before so I need some advice. I need to know pretty much the absolute basics and then some advanced tips and tricks when it comes to cooking it. I want to dry rub it but I need a recipe or can I use some of the ones I already have. I have Jeff's Rib Rub and a bunch of other rubs that I have gotten of SMF or do I leave it naked, spritz with apple cider vinegar (I have a water cooker) to keep it from drying out....what should I use for wood? Oh I just have so many questions....please someone help!!!!!
