Just wanted to drop in and say hi!  I am new, year or so into smoking.  I've done a lot of shoulders, lots of ribs, some briskets - but my experimentation has ended there.  I can't wait to try some of these recipes on these forums, and expanding my dishes.

I will try and upload some pictures tonight.  I have a custom built (perfect by no means) side box smoker - found used for a great price off of craigslist.  It is quite large, takes quite a bit of fuel to get up to temp, and made out of 1/4" steel all around!  Heavy sucker!

I still have trouble keeping temps even across the smoke box.  I am looking into tuning plates - and cheaper alternatives if any, primarily using patio pavers, but can't seem to find any information if those are indeed safe to use in the smoke box.

Also on the list is adding wheels to the four corners so I can push this monster around the patio without 3 guys coming over to help out!

Hello All,

Cheers from the North Coast on Lake Erie.  I'm not totally new to smoking meat, but am extremely new to doing it right.  I've been eavesdropping here for awhile and picking up some nice tips here and there and wanted to say thanks.

Gonna try my first leg of lamb Sunday, using a rosemary marinade and cherry wood.  I use a Masterbuilt electric with remote and feel that this unit is largely responsible for my limited success.

If the lamb turns out well, I'll upload some pics....if not, we'll make it a distant memory and not bother to document same.
