Hey All,

I'm Paul S. Crow from Lima, Ohio - LIMA is the acronoym for Lost In Middle America and brand new to the forum.  Last Spring (2012), after 18 years, I had to put down my trusty Holland grill.  The whole family was in tears!  So I bought me a new Weber Genesis 310 gas grill and a Smokin-it Model #1 electric smoker.  I've been struggling quite a bit with my grilling/smoking abilities cause my Holland cooking time was based on my consumption of beverages and that cooking technique is not working with these new cooking devices.  I look forward to your help and counseling!

Paul, morning and welcome to the forum....  Quite a problem you have...  Each smoker has it's own quirks and takes a new learning curve to get back to great Q.....  Practice and time will solve most of the hurdles...  Take pics (Q-Views) of your evdeavors for all to see...  Also, check your thermometers for accuracy.... boiling water type thing to make sure your temps are what you expect.... That should help....

Also, please take a moment and note your location in your profile, it will help in the future when answering questions about smokin'...   elevation, humidity etc....
