just acquired some orange wood, as well as some pellets and was looking to smoke a whole chicken. anyone ever perfect this? I have a orange marmalade glaze im going to use to finish the chicken with, but just looking for some input on different ideas?

That sounds great!  I would consider an orange juice brine as well (just add some OJ to your brine).  Give it that orange all over flavor!!!

Good luck,

Bill

I've made orange chicken before. It's wonderful with a coconut/saffron rice I make as well. I usually do the leaping frog method for the spatchcocking. It looks like this:

I would not brine or soak in orange juice because of the acid content. I don't even use OJ, but a traditional orange chicken is made with dried orange peel. I use a good bit of orange zest mixed with coriander, cumin, Thai chili peppers, fresh thyme and a small bit or rosemary, roasted garlic, a splash of citrus vinegar and that's pretty much it, of course salt and pepper. Mix everything together, rub down the chicken and let sit for 30-60 minutes and use some for basting as well. Hope this helps!!
