I am 2 hours into my first 7lb brisket smoke and I am dealing with 3 different Ambient thermometers my built in therm and a Oxo digital are showing the same and the Maverick ET-732 is show 60 degrees hotter and I did the ice test beforehand. The IT shows 124 degrees, its that too high after only 2 hours?

EDIT:

I guess I should post some pics from before and QView after.

I used this rub...

Nope.  You should be just fine as far as the IT.  Cook it until it's toothpick tender, not to IT.  If you want to make sure, move the probe to another spot in the meat, just to get a Dr.'s second opinion.  As far as the others all reading different, are any of them touching metal?  After this cook, I would suggest you do a boil test on all the therms instead of the ice, once again to get a second opinion.

Awesome, thanks for the quick reply! I will do the boil test after this is done.

Nice job.  Brisket can be a little tricky, cudos on success on your first try!

Thanks everybody! There is no way I would have been successful if it weren't for this forum and everyone's comments and help :)
