My new Masterbuilt

Been using a charcoal smoker that my girlfriends dad gave me for Christmas that got me completely addicted to smoking but was to much hassle to use in the NW PA winters. Sooooo I decided to purchase a propane smoker for myself. After hours and hours of reading reviews on many propane smokers I decided on the Masterbuilt 20051311 GS30D 2-Door Propane Smoker.  It was a toss up between this model and its big brother 40 but for the amount of smoking I do at this point I decided on the smaller model.  


Another reason for me choosing the GS30D was that it had 2 doors. 1 to access the cooking chamber and another to access the water and chip pan. I figured I would not be letting as much heat/smoke out when tending to the water and chip pans.


I have only used the smoker twice but I would have to give it a 4 out of 5 only because of the chip pan which gets extremely hot and just lights up the chips/chunks. I have found some mods for it with just putting tinfoil in the chip pan and it solved that problem. Others I have read that they just replace it with a 8" cast iron pan but I think i will stick with the tinfoil

I stopped using chips; no way to do a 12hr smoke... I too thought about the frying pan. But someone (sorry, I just can't remember who) suggested chunks wrapped in foil... Perfect! The manu specs said no more than 2 cups of chips... Whatever!! I slam my "chip" tray with (smaller) chunks wrapped (but not fully closed) in tin foil packets, placing the open seal side down.

I've been able to get more consistent temps, no flame flare ups, longer smoke times (without a bunch of the dreaded white smoke) AND quick change/addition of new wood (stuck in the grill to create the coal and get the burn started) and taking out the ashed packet of wood.
