Apple stuffed pork loin

After wanting to smoke a pork loin and reading all the delicious recipes i decided to do it up this past weekend. Bought a 7 lb loin and cut it up to give myself probably a 4-5lb loin to smoke


I filleted the loin to lay flat for stuffing. Being the first time i wish i would have gotten it a little thinner.

Was going to try and roast my own apples but went with apple pie stuffing due to time.


Watched many videos to try and figure out how to tie the roast up. It was a little tricky trying to roll it up while trying to stuff the apples back inside but after getting the first end snugged up it went very well.



Found a sweet rub in a book called Smoke and Spice(which has a ton of great recipes) called Sweet Sensation. Some cinnamon, nutmeg,and other spices. My girlfriend said it smelled like Christmas ha-ha. Placed it in the fridge for the night.


Placed it in the smoker at 235 and figured i would try some apple juice instead of water to see if it really made any difference. Not sure if it was the apples inside the loin,the apple juice,or the apple wood chips i used but it definitely had an apple taste to it.


Pulled the loin from the smoker at 145 degrees (about 3 1/2 hours) and wrapped it in tinfoil for about 45 minutes.


Turned out great! Very moist and the bark had a phenomenal taste! Served with my moms "funeral potatoes" and as you can see some miller to wash it all down!

 
Looks really good!

Lots of good stuff here on water pans, and the use of.. They really don't do much to enhance the flavor, or add moisture to the product. More used as a heat sink. Which when filled with liquids makes most smokers take longer to heat up and not as easy maintain heat. With sand in the water pan you have a better thermal mass.

 I did an Italian Sausage Stuffed, Porketta Seasoning in the oven on Sunday - really wanted to smoke it but wasn't going to shovel snow!
 
Looks great wish i would of thought of doing something like that to the one i did sat im sure it tastes every bit as good as it looks
 
Nice job!  I've been thinking about smoking a loin, half as the loin and the other half as canadian bacon -  and now I HAVE to.  Going to follow your plan (beer included), so thanks for sharing.
 
I think the next one I smoke I will roast the apples first with cinnamon but everything else will stay the same as far as this recipe goes,including the beer!
 
Looks really good. Never thought about pie filling. hmmmmmm
