first attempt at spare ribs 1/12/13

Decided that i would try smoking some ribs after a grocery store had them on sale. Started off with 2 full racks and didnt expect them to be so big!


After some much needed studying here on SMF and a couple videos on youtube i figured out i had to cut them up.


Decided on a sweeter rub and rubbed them down, wrapped them up and placed in the fridge for about an hour. Pulled them out and decided to use a Masterbuilt rib rack that i recently purchased online. I dont know if i trimmed them to short for the rack or what but they kept falling through the middle. Started the smoker up on the somewhat windy day to right at 200.  


Smoked the ribs at 200 with hickory chunks for about 6 hrs. Spraying them about every hour with apple juice. As you can see I smoked everything even the meat that was cut off. 


Wish I would have done the 3-2-1 method now because they didnt end up fall off the bone. They were still very tasty and there were no leftovers. Will definetly try a couple different things next time. 

I am still addicted to this bbq though!
 
Looks like they turned out great, trying different methods can be fun, some you may end up liking more then others but generally I have never had a real bad one that wasn't edible yet.
 
this site and the people on here are very helpfull and i have learned a few things here myself. you did a fine job on the ribs. i spray apple juice on the ribs myself even though i mop them as well. i have used the 3-2-1 method on spareribs and have adjusted it somewhat. just depends if you want fall off the bone or tender to the bite. i still make mistakes here and there but that's part of the adventure. Reinhard
 
Your ribs look great! Enjoy the process of dialing in the perfect ribs for you. I've been trying for perfection for years and have yet to attain it. I figure I'll keep trying until I do, or die trying. Yours look a whole lot better than some of my early attempts, so I'd say you're definitely on the right track.
 
Lookin' Good!  It sounds like your on the right track.  Experimenting and trial-and-error is the way to get 'em just the way you want.  Did you cook them at 200* for the whole smoke?  If you want to go with a 3-2-1 smoke next time, you may need to cook a little hotter to get them fall-of-the-bone tender.  Most people cook their ribs in the 225*-250* range.  I tend to fall on the high end.  I like to do 3-2-1 ribs (actually more like 2.5-2-1, depending on the size of the wracks) at a cooker temp of 250*.  Makes for tender, tasty ribs every time.
