Hello,
My name is Mike, and I'm from New Jersey. I have recently graduated college with a degree in digital media (with the intent to work on video games), and in my free time I am training to be a pro wrestler. I figure I have the fancy piece of paper, why not try for a dream? Other than wrestling, for years I have been an avid fan/addict of good BBQ, my personal kryptonite being a good rack of ribs. My folks told me of a smoker we have had for years, but never used, a few weeks ago. After wading through the shed in the back yard a few days ago, I got it out and have already cooked a few meats, and while the first attempted ended in a less than satisfying brisket, the second attempt ended in two very tasty dry rubbed chicken breasts...although I must admit, the smoker needed a LOT of babysitting, and I came here as a result. I indeed plan to modify my smoker in order to make it less...finicky, I think is the word.
As of now, I have a fair amount of time on my hands due to a surgical procedure i had back in early January that hasn't healed fully, and may not for a few months. I figure I may as well get into something I've wanted to do that my doc will let me. So far, the reviews from others have been positive, even for that brisket I mentioned before, so who knows, maybe I can indulge in my BBQ passion while I wait to get back into the ring or into a gaming job.
