hey guys im gonna give a crawfish boil  a try this weekend i need some advice on what sausage to mix in with the corn and potatoes i was thinking of making a beef smoked sausage ?

What I do every year for July 4th....is a Hillshire farm beef sausage. I do a low country boil and have for years.

But....I know now..I can make my own too this year!

I used homemade pepperoni in ours. worked great for us.

thanks for the help i think i will go ahead and use what i have this time which is close to the hillshire farm but gonna give pepperoni a try next time .

I would use Andouille as it is the traditional sausage for a cajun crawfish boil.

How about filling out your location in your profile.. Its times like these members can see where your at and know what sausages are available in your area. I agree with fpnmf with the andouillie...
