HELLO EVERYONE.
I just started getting into smoking meats and I want to make some venison kielbasa. I shot two deer this year and I had one of them ground up into hamburger with no pork added because I want to make kielbasa. So I have a couple of questions that I need to ask. first I want to know if i can use the hamburger that I have already had ground up. Secondly if i can use it I need to know how much of the hamburger I should use and how much pork to mix in with it I want to make about 8 rings to start. thirdly I need to know how to stuff the castings ( I am using an electric grinder ) I have the stuffing tubes for it. I have read that you need to but the casting on the tubes wet so that it sides off easy. Is the true? All the advice and help the help you can give me will be great.
