HELLO EVERYONE.

       I just started getting into smoking meats and I want to make some venison kielbasa. I shot two deer this year and I had one of them ground up into hamburger with no pork added because I want to make kielbasa. So I have a couple of questions that I need to ask. first I want to know if i can use the hamburger that I have already had ground up. Secondly if i can use it  I need to know how much of the hamburger I should use and how much pork to mix in with it I want to make about 8 rings to start. thirdly I need to know how to stuff the castings ( I am using an electric grinder ) I have the stuffing tubes for it. I have read that you need to but the casting on the tubes wet so that it sides off easy. Is the true? All the advice and help the help you can give me will be great. Hey and if anybody has any good recipes for venison kielbasa that I can try it would be greatly appreciated. thanks.
 
The pork to venny ratio really depends on what you plan on the final product to taste like. I've made 100% venison sausage before and love it and I've done about every other ratio from 20%-50% pork to venison. If you want to keep the venison flavor then try a 20% pork ratio. If you want to get more out of your venison then stretch the ratio to 30%-40% pork.

The pork & fat really helps with moisture and flavor. I like about 30% pork to venison because it adds the needed fat/flavor but keeps the venison flavor in there.

Joe (boykjo) has an awesome simple Kielbasa seasoning that he makes, and I've tested on all pork and it was fantastic. There are a lot of Kbasa recipes here if you search for them.  Keep it simple and you wont' be disappointed.

I like a 50/50 ratio of venison and pork shoulder. Make sure you have all the rigtht parts for stuffing sausage.. You will need a stuffing/kidney plate or star for ypur grinder. You dont stuff through the grinding plate. What casings are you planning to use. fresh or collogen
