Let me just say that it has been WAY TOO LONG  since I posted on here, but it feels sooooo good to be back.  I finally made it back to the U.S. in October after being in Italy for 2 years.  I was able to get a smoke in Presidents Day weekend (spare's w/ no pics, SORRY!!) so I figured I'd break out the big block again for some pulled pork.  Got off work at 11 tonight, came home and rubbed down a butt and put her to bed.  I'll be back up in 4 hours to throw it in w/ more pics to follow.

Italy is one of my dream assignments. But im going to try and put in for BOP after Guam for Florida gotta get back to my bass tournaments again lol.

I always wanted to go to Guam, but never had any luck.  I would was supposed go to Maryland after Italy but my orders got cancelled and they sent me to Louisiana.  Good luck w/ the BOP.

I know Bergamo very well.  I used to fly out of there on my many trips to Germany.  I actually lived just outside Desenzano del Garda.  Lago di Garda (Lake Garda) is such a beautiful lake and was so thankful we were only a 10 minute drive away.  Last summer was one of the hottest, driest summer's they've had in awhile and it was so refreshing taking a dip in a glacial lake.

Just to tease everyone a little more, here it is just before going into the smoke


While waiting for the TBS to start rolling, I hacked up it's brother (2 pack from Sams) to make some maple breakfast sausage while I'm waiting for this.  Should be a fun day!
 
Just thought I'd give a quick update, the butt's hovering around 151 and appears to have hit it's stall.  I've been up for 26.5 hour straight now (didn't get my nap in last night), so we're going to see who has more stamina....me or the pork.  I'm gonna go out on a limb and say me!
 
Ya man Guam is awesome. we have been here 2.5 yrs and love it. If you ever get the chance to come here you should. How do you like louisiana? The pork looks great what rub did you use.

Louisiana's not too bad.  It's actually much better than I anticipated.  The fishing on base is amazing, and from what I hear the hunting isn't that bad either.  The rub I used is my own that consists of turbinado sugar, sea salt, fresh cracked pepper, paprika, garlic and onion power, cayenne pepper, celery salt, ground mustard and allspice.

After being up for 36 straight hours, I decided to head to bed before I could post pics of the final product.  Everything finished up at 10:30 last night (16.5 hour smoke) and pulled it at 11:30 to have a late dinner.

Here it is after coming out of the cooler.  The bone pulled out nice and clean.
