Sunday Funday BBQ - Turkey, Wicked Beans and Brisket

i set up a bbq last sunday at a local park and invited a couple handfulls of friends to the park for some good Q and other foods that they brought. i brought my WSM and Weber Kettle for grilling (had a friend who makes a great churrasco). The plan was to smoke a turkey breast, brisket, and Wicked Backed Beans.

Got the the park as soon a they opened knowing my brisket would take awhile and i told people to arrive around 1pm (yes i know this was a risky venture LOL), but i knew there was going to be plenty of food so the brisket could be last.

The night before i mixed up some Slaughter House Poultry Brine, this was my first time brining a bird and it was delicious! I also through together a quick brisket rub. I just eyeballed a few ingredients but it was something like this

1/2 cup Turbo Sugar

1/4 cup Paprika

1 tbs black pepper

1tbs white pepper

1/2 tbs Cayenne

1 tbs onion powder

1 lbs garlic powder

Here is the breast in the brine (breast was about 6lbs). mixed brine together and the pot in the fridge to soak overnight

After about 3.5 hours took the turkey out and sliced. Not my prettiest presentation ever but the beers were flowing and there was alot going on. above that is my friends Churrasco and homemade chimichurri



Next up was the Wicket Baked Beans. Used some Turkey bacon and Cayenne peppers from my garden


it was getting late and my brisky was only at about 175...i knew i wanted to go longer but the day was getting late so i pulled it out....it hurt to do that but it was still pretty tender and good!

About 2 hours into cooking the park staff came by and told us that the pavilion we set up in was reserved. we had looked for papers saying it was reserved and didn't see any so we figured it was open. so the lady who works there said "you need to move that", i respond with "that thing is really hot!". She tells me that we can hose it down...my heart sank a bit. I said "no we'll figure something out".

Ever seen 3 guys pick up a 250 degree smoker but the feet (the coolest part) and load it slowly into the bed of a truck..then very slowly drive 40 yds away and unload. Not a fun task at all LOL. but it worked out

It was a good day with friends! Beer, BBQ, Horseshoes and more!
