Hello Smoker Pros, I've been lurking here for a couple months. Quite impressed with the knowledge in this group. I'm a decent cook and somewhat skilled in the ways of smoking, but I started visiting the forums because I am going to build a smokehouse for my best friend for his birthday in June. He the pro (he's cooked at James Beard House twice now), so I want to build something that he can use for cold/warm/hot smoking. It has to be somewhat portable (30 ft from our shared deck to storage area) and it has to be of pretty sizable capacity. Understand that my mission is totally self-serving since I will get a "cut" of everything that comes out of it. I have a few months to determine the best build and I have access to pretty much any tool I could think of needing (including stainless steel fabrication). As I narrow down my process, I will ask questions in the appropriate forums. Thanks. I look forward to the advice from this group.
