Hi everyone Glad I found this forum. I am a 65 year old retired man from south Louisiana now living in north Louisiana. I love cooking jambalaya, gumbo, cracklins, and sauce pecant  I have just started smoking meat  I started out with a small electric smoker doing ribs, brisket, and pull pork. I have also made sausage but it wouldn't get the color I like so I just finished making a smoker out of an old freezer  my first batch came out beautiful using hickory. But I think I would like oak better. My problem is I can't find any oak saw dust. Thanks for letting me be a part of this forum.
