Put 'em on this morning about 11:30 CST and 6 hours later they are at 165. Probably about time for the stall. The MES is set for 240° F.
Now I'm gonna ask for some advice.
First, to foil or not to foil for the rest of the way? I think I'll take 'em to about 200°.
Second, when I pull 'em at whatever time this evening, they are going into foil (if I haven't already foiled them) then get wrapped in a big ole beach blanket and going into an igloo cooler. I plan to leave them there until morning. I think I will be out of any danger from bad temps. I will pull them tomorrow morning.
Third, how do you pull your butts? The last ones I did I sliced and wasn't too happy with it. I thought I'd pull 'em with 2 forks this time. I'm open to suggestions for a good technique.
Fourth, I'm going to take the barbecue to the garage that does all the work on our cars as a "Thank you!" for going that extra mile for us. But . . . I don't know how much que per person I should plan for. There will be close to 25 pounds when it's pulled. I doubt there are enough guys there to eat it all (besides, I'd like to put some in the freezer).
I'm thinking soft flour tortillas and some slaw and beans. Simple and easy because I've got an annual physical exam early tomorrow afternoon.
