let me put my hood on, there seems to be something wrong with your smoker.......its SHINY inside. You really need to get that fixed ASAP.

Nice looking smoker!! Hope you enjoy yours as much as I have enjoyed mine.

Remove the water pan and place the AMNPS on top the hole

I use an 8x8 disposable pan on the bottom to catch any drippings

Pull the chip loader out about 2"

This is the best place for good air flow

Yes, could not wait to smoke in it.  Not shiny now.  I really liked my 30 but the 40 is really nice.  I like the new features too.

I have been placing it below the drip pan on the deck.  You suggest on top of it?

I assume you recommend the same for the MES 30 if so what setup do you recommend for the MES 30 when cold smoking? Same?  My Pellets seem to go out when cold smoking.
