Good Morning to all.  I have a new Yoder 640 coming today and would like to do a Boston butt tomorrow.  This will be my first cook on a pellet.  If my butt is at 10.5 pounds how much time would you plan on.  Some  say 2 hours per pound.  That seems a bit long.  I will be taking it to an IT of 200-205 but would like to know what you think I need to allow time wise?  Will crutch if necessary.

The general rule is 1 1/2 hours per pound of meat with a cook chamber temp of 250°. If you cook at a lower temp say around 220°-230° then it will take you closer to the 2 hour per pound.

YMMV.

Even at 250* I've had them take 2+ hrs per pound, so don't be surprised when its not done, be happy if it is! Make sure you use a good thermometer and don't rely on the factory one if you haven't calibrated it.

As redneck69 said cut the butt in half. This will give you two 5 lb butts and reduce smoke time to around 10 hours. Figure 2 hours per pound to be sure it is done on time. If it is done earlier, there is no problem holding it over till serving time.

Thanks for your input.  I'll just cut it in half.  That makes sense to me.  It doesn't roll on grass very well.  I had a tough time getting it from the driveway around to the back patio.  Those small wheels are made for a hard surface.  I have serious illness in the family so I will probable put smoking it off a few days.  Thanks again.................
