I bought a corned beef for the store, soaked it overnight in water, with two water changes. I didn't have time to let my rub sit overnight so this morning I took it out of water and dryer it down then coated in mustard and rubbed it up with my Katz deli rub. The corned beef was 4lbs I threw it in at 1030am and it's at 149 right now


 
Yes.. i did ge the tast i was lookign for... however... i had my second attempt for St Paddys day and smoked a 15lb corned beef... which came out even more amzing... same rub and recipe.  smoked it for 15 hours.
