I am currently testing variations of jeffs rub. Instead of spending a ton of money on a lot of racks can you just cut 1 full rack into 3 smaller racks and cook them the same 3-2-1 for spares. I didnt know since they would be 1/3 of a full slab if they would be done cooking a lot quicker. What I was planning was buying 3 full racks which would give me 9 smaller racks where I can try 9 different variation of rub.
 
I've never done that, but I would think it would take a little less time to smoke.

I'm not an expert, but with the smaller surface area, I think 3 hours of smoke would be to much. If they get to much smoke after they reach an internal temp of 160 they start to taste bad. I've made that mistake before. Just keep a check on the IT and they should be fine. Good Luck!
