Hey everyone, 

Been looking around on the forums for a while for which charcoal grill to purchase etc... Ended up getting the Char-griller smoker pro after some deliberation between that and the one-touch gold/silver. The main reason I converted to charcoal is to start cooking some authentic jerk chicken (my favorite food of all time), pimento logs/leaves and all. 

I'm a reasonably experienced gas griller. Had some very basic gas grills in the past, but have done some gas forms of smoking and beer can chickens etc... I loved grilling (and drinking beer while doing so) and am looking forward to the new challenge that charcoal presents. 

I have the cast iron all seasoned up and am giving the smoker pro a go tonight. I'm waiting I get a hang of the basic charcoal grilling before I purchase the side box and make mods etc... 

Looking forward to picking some of your brains as challenges and problems arise and am ready for some REAL bbq.

Welcome to the forums... I also have the CG Pro... I don't have the side firebox ether so here's what I did and you might want to seriously consider doing it as well... As you are going to find out, it is very hard to control heat with this unit as there are so many air leaks... for mine, to keep it down to 225` I have to run the intake all the way closed and the exhaust only about a 1/4 open...

I built this charcoal basket to keep charcoal all gathered up in the end closest to the intake vent.. It works great to do long smokes using the minion method... It lets the ashes drop to the bottom of the smoker and not smother the fire... you will also see the exhaust extension on the inside of the cover.. it goes down to grate level when lid is closed ... just these 2 very cheap mods made all the difference in the world...

In the picture I only filled half the basket to show the divider in the middle of it... When I do long smokes (ribs,butts, briskets) I will fill the basket up all the way with wood chunks mixed throughout... I leave just a little hole in the end for about 10 or so lit briquettes (only half lit, not red hot) You might also want to bend the sides in our out so it's a tighter fit when you close the lid

Basket dimensions are 5w x 17L x 4.5h

That's an awesome idea that seems more fit for smoking on a smaller scale.

I'm going to use the BBQ for some basic Indirect type cooking for a bit... Just learning the ebbs and flows of charcoal again... But the first mod I was going to do was the chimney extension and your set-up looks great. Especially since I'll be cooking for 3-4 more often than 5+

Will keep posting and be in touch soon for some specs on your set up!
